Learn About Chicago’s Green City Market Sept. 27 at the Stevenson Center on Democracy

Green City Market board member Elizabeth Richter will share the inspiring story and mission of the Green City Market this Sunday, Sept. 27 at 2 p.m. at The Stevenson Center on Democracy (25200 N. St. Mary’s Rd. Lake Forest, IL 60045). 

Richter will discuss the contribution the Green City Market and its vendors make to ensure Chicagoans access to local, sustainable food. Tickets are $15 for the general public and free for students that register online using their school email. The Green City Market was founded with a plan to provide a marketplace for purchasing
sustainably grown food that educates, promotes, and connects farmers and local producers directly to chefs, restaurateurs and the greater Chicago community. In 2014 they launched the Green City Market Cookbook which includes more than 90 seasonal recipes from the local Chicago community of customers, volunteers, farmers and Chicago Chefs.


Chicago’s Green City Market has been named one of America’s Top 10 Farmer’s Markets by USA Today. It has come a long way since its humble beginnings 1998. The Market started as a handful of vendors in an alley next to the Chicago Theater and has since grown into the best and biggest farmers market in Chicago with more than 60 vendors and 175,000 visitors per year.

Green City Market Chef BBQ Restaurant List Continues to Grow; Secure your tickets now.

Green City Market’s 15th annual Chef BBQ benefit, taking place this Thursday, July 16 from 5:30 p.m. – 8:00 p.m. (VIP entry at 4:30 p.m.) in Lincoln Park, continues to add high-profile restaurants to their ever-growing list of participants. Complementing the BBQ’s 100+ chefs and restaurants are more than 30 of the Midwest’s best brewers, distilleries, wineries, and mixologists will feature locally made craft beer, wine, hand-crafted cocktails and non-alcoholic beverages.

With the BBQ only days away and Thursday’s forecast looking bright, now is the time to secure your ticket to Chicago’s most exciting food fest of the summer. Twenty-One New Restaurants Featured at Green City Market’s 15th Annual Chef BBQ Benefit July 16

CHICAGO, IL, July 2015 — Twenty-one new restaurants will join Green City Market’s 15th annual Chef BBQ Benefit 5:30 p.m. to 8 p.m., Thursday, July 16 in Lincoln Park. The BBQ will showcase the who’s who of Chicago’s culinary scene, including this year’s new comers: Acanto, Arbor, Bar Takikto, Bohemian House, Bottlefork, Fork, Formento's, Frontier, HaiSous, Japonais by Mormioto, Lillie’s Q, Maddy’s Dumpling House, River Roast, Salero, Seven Lions, Taus Authentic Food, The Duck Inn, The Gage, The Kitchen, The Nomad Food Company and Villains Chicago. The list of new restaurants continues to grow, so be sure check the Green City Market website often to see what restaurants have been added.

All dishes served at the BBQ feature items offered from the bounty of the market with over 100 chefs and restaurants creating culinary magic. In addition to food, more than 30 of the Midwest’s best brewers, distilleries, wineries, and mixologists will feature locally made craft beer, wine, hand-crafted cocktails and non-alcoholic beverages.

Summer Bean Salad with Sun Gold Tomatoes, Market Herbs, Smoked Trout, and Goat Cheese Dressing


I’ve been going to Green City Market twice a week since 1999. My thing is to get there before anybody else, just before it opens, around 6:00 a.m. At that hour, I might chance upon a special find or something in limited quantity: tiny mustard greens with flowers, baby sunchokes, or the first of the July tomatoes. The beans and tomatoes in this dish just happened to be sitting on Beth Eccles’ tables at the Green Acres Farm stand one day, and the idea leapt into my mind to do a light salad with smoked trout from Rushing Waters. These are the kinds of magical moments you search for as a chef; those that seem to happen at that early morning hour as you walk through the day’s harvest. —Jason Hammel, co-owner/chef, Lula Cafe; co-owner, Nightwood Restaurant

Prep time: 30 minutes
Cook time: 1 minute
Makes 4 servings

2 ¼ teaspoons salt, divided
½ pound mixed pole beans, such as yellow, green, and haricots verts, etc.
2 small pattypan squash, sliced on a mandoline or very thinly sliced
2 radishes, sliced on a mandoline or very thinly sliced
½ cup yellow Sun Gold cherry tomatoes, quartered or halved
2 tablespoons extra virgin olive oil
2 teaspoons red wine vinegar or champagne vinegar
¼ cup chopped mixed fresh herbs, such as tarragon, thyme, basil, and chives
¼ cup sour cream
¼ cup buttermilk
1 small shallot, minced
1 tablespoon honey
1 ½ teaspoons cider vinegar
1 teaspoon Dijon mustard
½ cup crumbled goat cheese
3 ounces smoked trout, broken into chunks

Cooking Instructions:
  1. Place a bowl of ice water next to the sink
  2. Fill a large stockpot with water and place it over high heat. Add 2 teaspoons of the salt and bring to a rolling boil. Add the beans and simmer for 30 seconds to 1 minute. Remove from the heat.
  3. Drain the beans and plunge them into the ice water bath to cool. Drain, pat dry with a paper towel, and cut the beans on the bias into ½-inch slices.
  4. In a large bowl, toss together the beans, squash, radishes, tomatoes, oil, red wine vinegar, and the remaining ¼ teaspoon of salt. Add the herbs and toss again.
  5. In a medium bowl, combine the sour cream, buttermilk, shallot, honey, cider vinegar, and mustard and mix well. Stir in the goat cheese.
  6. Spoon the dressing onto 4 serving plates. Top with the bean mixture and smoked trout and serve.

Roast Leg of Lamb in Garlic-Mint Marinade with Pea Shoot Salad
from The Green City Market Cookbook

 

My mother, Helen, roasted a leg of lamb some Sundays for supper following church. She always put so much care and attention into her cooking that she didn't even realize how detailed her effort was. For example, she would squeeze a lemon over the lamb and then make small incisions in the meat and insert slivers of garlic. Under the leg of lamb, she would place small new potatoes, onions, and more garlic for added flavor. Finally, she made a great pan jus with the delicious lamb drippings. Prep time: 25 minutes
Standing time: 30 minutes
Cook time: 1 hour 20 minutes
Makes 8 servings

For the Lamb:
1 (4-5-lb) whole bone-in leg of lamb
Kosher salt, as needed
Freshly ground black pepper, as needed
1 cup packed fresh mint leaves, chopped
4 cloves garlic, minced
24 medium-sized firm new red potatoes, halved (if the potatoes are small, use more and leave them whole)
¼  cup olive oil, divided
4 sprigs fresh thyme (optional)
1 head garlic, separated into cloves
⅓ cup white or red wine

For the Pea Shoot Salad:
2 teaspoons olive oil
1 ½ teaspoons sherry wine vinegar
3 ounces (about 4 cups) fresh pea shoots
Shaved radishes (optional)

To make the Lamb:
1. Butterfly the lamb and remove the bone, excess fat, heavy silverskin, and tendons. Sprinkle the inside and outside of the lamb generously with salt and black pepper. Rub the mint and garlic over the inside and outside of the lamb. Roll the lamb up and tie with kitchen string. Let stand at room temperature for 30 minutes.
2. Preheat the oven to 425°F.
3. In a large, shallow roasting pan, place the potatoes. Add 2 tablespoons of the olive oil and season with salt and black pepper. Toss well. Place the thyme sprigs (if using) over the potatoes. Add the garlic to the pan. Place the lamb over the potatoes and drizzle the remaining 2 tablespoons of oil over lamb. Roast until nicely browned, about 15 minutes.
4. Reduce the oven temperature to 325°F and continue roasting for 1 hour to 1 hour and 20 minutes (depending on the size of the lamb), until the internal temperature of the thickest part of the meat registers 130°F. Remove from the oven.
5. While the lamb is roasting, test the potatoes by piercing them with a fork. When they are tender, transfer them to a bowl and keep warm.
6. Transfer the lamb to a platter, tent with foil, and let rest for 20 minutes before carving.
7. Place the pan full of drippings over 1 or 2 burners on the stovetop. Add the wine and cook over medium-high heat, scraping the drippings from bottom of pan. Add a splash of water, if needed, and bring to a boil. Stir in any juices from the lamb platter. Remove from the heat but keep warm for serving.

To make the Pea Shoot Salad:
1. In a medium bowl, whisk together the oil and vinegar. Add the pea shoots and radishes (if using) and toss well.

To serve:
1. Carve the lamb into slices and serve with the warm potatoes and pan juices. Garnish with the salad.

Green City Market Names New Executive Director - Melissa Flynn

Chicago -- Melissa Flynn has been named executive director of Green City Market  one of the nation’s preeminent sustainable farmers markets, located in Chicago. Flynn comes to Green City Market with 
Melissa Flynn with border lr extensive leadership experience including eight years as executive director of the Lincoln Square Ravenswood Chamber of Commerce.

 “We are thrilled to have Melissa Flynn as our new Executive Director,” said Vi Daley, co-president of the Green City Market board. “Melissa has a very impressive background which will be beneficial to our market,” she said.  Sarah Stegner, co-president of the Green City Market board said: “Melissa’s passion for sustainability is the perfect fit for the market.”

“This is a very exciting time to be working in the field of sustainability and urban agriculture and I cannot think of a better place to do so than the Green City Market,” said Melissa Flynn.   Flynn is a skilled and experienced executive with a proven track record for creating a successful business climate balanced by strong values of sustainability and community.  

Most recently, Flynn was managing partner of MJF Partners LLC, focusing on helping small businesses and non-profits in strategic planning, internal restructuring and identifying key collaboration and marketing opportunities.

Flynn has a Masters Degree in Human Resources from Loyola University and is a graduate of the Institute of Organization Management from the U.S. Chamber of Commerce.

 “It’s expensive to run Green City Market,” says Sarah Stegner, co-president of the board. "We understand that a lot of customers think that shopping at Green City Market supports the market’s operations. It doesn't."
 
Green City Market’s greatest challenge is balancing the growing expenses of running an outdoor
market while keeping its farm fees as low as possible. Green City Market's booth fees are among the lowest in Chicago by $10-$20 per market. However these fees cover just 14% of its expenses to run an outdoor market, with its top expenditures being mulch to keep our shoppers and vendors dry in inclement weather, park district fees, and the required outdoor restrooms.Because of the difference in Green City Market’s costs to operate Chicago’s first year-round farmers market and keeping its farmers' fees intentionally low, Green City Market must rely on the support of generous individuals to help cover this difference.

Green City Market asks you to please consider making a tax deductible donation to our 501 (c) 3 charitable organization to help cover the gap between its costs to run the market and its intentionally low farmers' fees. This year’s new effort to raise money through the sale of the Green City Market Cookbook provides an added income stream to help supplement the cost of running the market. The cookbook makes a perfect holiday gift and those who purchase the book can feel a personal reward as they are helping support the market’s bottom line. This year’s #GivingTuesday dollars can go even further as Green City Market has a $20k matching gift for our Edible Gardens program. Green City Market will create donation cards if anyone wants to give a gift to a Market fan. Additionally, Green City Market offers sponsorship opportunities to support programs such as Chef Demonstrations, the Green City Market Chefs Barbecue, Eat Local campaign and Club Sprout activities.

Green City Market Junior Board Online Auction Now Live

The  Green  City  Market  Junior  Board  is hosting an  online  auction packed  with  exciting,  one-of-a-kind  experiences  for  Chicago  food  and  drink  lovers.

at  Wicker  Park’s  Chop  Shop  &  The  1st  Ward  (2033  W.  North  Ave.)  from  7 p.m. to  10 p.m.  Throughout  the  evening,  guests  will  enjoy  a  walk-around  stationed  tasting  featuring  local  chefs’  all-vegetable  dishes  made  with  Green  City  Market vendor  produce.  Complementing the array of  delicious
vegetarian  fare,  Junior  Board  member  chefs  Jared  Batson,  Scott Manley  and  Eric  Mansavage  also  will prepare  three  whole  pigs  “Three  Little  Pig-¬-style,”  incorporating  straw,  wood  and  bricks  both  in  their  cooking  methods  and  for  creative  inspiration.  With  all  the  great  local  food  on  offer,  attendees  will  be  able  to

Cantina de la Granja Green City Market benefit event on October 29


Cantina de la Granja (5025 N. Clark) is hosting a Green City Market benefit on October 29 from 6:30 p.m. to 8:30 p.m. A Modern Mexican restaurant opening in early 2015 in Chicago's Andersonville neighborhood, Cantina de la Granja's vision is to innovate traditional and regional Mexican dishes through modern culinary techniques while keeping flavors authentic. 

Cantina de la Granja will provide a Midwest farm-to-table experience by sourcing from a hyper-local group of farmers and growers, with 70% to 75% of the ingredients including meats, seafood and vegetables, sourced within 200 miles of Chicago. The owner is Mark Robertson (Uptown Management Group - Crew Bar & Grill, Sofo Tap). The exec chef is Diana Davila.
In addition, Cantina de la Granja will feature a 1,400 square foot rooftop garden designed to produce 1,000 pounds of ingredients, not only to be use in the restaurant, but also as a source to prototype varietals such as peppers that will continue to be harvested at local farms.
