Meet Karma's New Executive Chef Paul Choi Karma Asian Food & Fine Wine and Karma Pub in Mundelein

Chef Paul Choi low res 300Throughout his seventeen year career, Executive Chef Paul Choi has developed a multicultural contemporary food sensibility, and he never strays from his commitment to serving creative dishes made from fresh, high quality ingredients. He began his career working as a line cook for acclaimed Chef Shawn McClain at Evanston’s eponymous restaurant, Trio, preparing outstanding contemporary American cuisine. While he worked at Trio in the evening, during the daytime Choi completed the rigorous culinary program at Kendall College where he rounded out his skills with a focus on classical French technique.

After leaving Trio, Choi went to work for award winning Chef Kelly Courtney, working virtually every station at OKNO restaurant as he prepared contemporary global cuisine. He then moved to her restaurant MOD where he prepared cutting edge bistro fare.

Choi was then appointed Sous Chef at Tizi Mellou, a highly regarded Mediterranean fusion restaurant. In the fall of 2000, Choi was recruited to be the opening Chef de Cuisine for Bistro Marbuzet, a casual French Restaurant in Forest Park.  Later he also assumed the same role for Jacks on Halsted, a contemporary American grill, with the same company.
In 2002, Restaurant Development Group (RDG) had a need for a Corporate Chef for their Bar Louie concepts as well as the newly developed Red Star Tavern concept.  In the short span of two years, Choi oversaw the opening of 28 restaurants in total.  

Wanting to continue to learn and grow, Choi joined Chicago’s renowned Blue Plate Catering in 2004 to hone his skill in the planning and production of everything from small, private dinner parties to corporate events of 1000.  From there he became the Chef de Cuisine of Jordan’s Food of Distinction, a high-end catering company in Chicago.
In 2007, Choi was bitten by the bug to open his own restaurant, Sura, located in the Lakeview area of Chicago.  Although well liked and well-reviewed, Choi’s Contemporary Korean restaurant could not survive the economic downturn that claimed many restaurants that opened around this time.

Looking for a change and matching his love for the outdoors, Choi signed on to be the Chef at Sandy River Lodge in Sandy River, Alaska for the summer fishing season. Returning to Chicago after the season, Choi rejoined the staff at Jordan’s Food of Distinction. However his love of Alaska kept pulling on him and in 2010 he returned, this time to the remote fishing village of Cordova, home of the world famous “Copper River Salmon,” as the Executive Chef and General Manager of the Reluctant Fisherman Inn. After three years he returned to Chicago in August of 2012 for family reasons.

Upon his return to Chicago, he accepted the position as Executive Chef at the Chicago Botanic Gardens in Highland Park. There he developed a reputation for providing extraordinary cuisine in both their casual restaurant as well as high-end catered parties for donors and patrons.
In January of 2014, Choi was selected to be the Executive Chef at Karma Asian Food & Fine Wine. His first task was to retool the menu and incorporate his signature of style of contemporary, clean flavor profiles. Combining his Asian background with his classical French technique, he has completely revamped the menu with guest favorites such as Firecracker Shrimp, Korean BBQ Glazed Ribeye Steak and Sweet Ginger Bread Pudding.
Choi appreciates the opportunity that “Asian Fusion” gives him to explore the cuisines of Korea, China and Japan while melding in some subtle American influences. Focusing on sustainability and quality, Choi strives to procure the freshest and best local ingredients possible. He relishes the fact that when people enjoy the food they are eating, it can change their mood and outlook on life. This is a core value that motivates him to continually challenge himself and his staff to provide the most memorable dining experience possible.

Guests who order two entrées can purchase a bottle of either house red or white wine for an extra cent (there is a limit of one bottle for every two persons). This may be the most enticing wine offer to come along in a long time.

Among Chef Choi’s new entrée specialties are the signature Korean BBQ Glazed Rib Eye ($26), served with sticky steamed rice and wilted ginger spinach that goes beautifully with a red wine, and the Crispy Tuna ($26), served with seasonal greens, wasabi vinaigrette and sesame-soy, well paired with a refreshing white wine.
Firecracker Shrimp 300 pixels w borderStart your meal with tempting appetizers such as the Seared Ahi Tuna with wild arugula, seasonal grape tomatoes and ginger-soy ($12), Firecracker Shrimp with scallions and chili ($10) or the Carpaccio, togarashi seared beef with seasonal greens, cilantro flatbread, wasabi vinaigrette and soy caramel ($9).

Refreshing salad choices include the Karma Salad with seasonal greens, cucumber, red onion, carrot noodles, tomato, and Szechuan peppercorn vinaigrette ($9); or the Chicken Tonkatsu Salad that starts with a house lettuce blend that is combined with tomato, cucumber, peas, carrot noodles, scallions, wonton chips, and yuzu-ginger vinaigrette ($13).

Kate Schmidt of the Chicago Reader received a pleasant surprise when she visited Act One Café (1330 W. Morse Ave., Chicago; 773-381-4550). “I was wowed by the fresh and flavorful food.” Schmidt writes, “Another surprise winner was the seafood boo-yah, bouillabaisse with shrimp, octopus, and the best bay scallops I've had since a trip to the east coast several years ago.”

Make It Better reviews Karma and Guanajuato
Make It Better magazine restaurant reviewer Julie Chernoff had the opportunity to visit North Shore restaurants, Karma and Guanajuato.

Chernoff found nirvana at Karma (510 E. Route 83, Mundelein; 847-970-6900). “The Tempura Green Beans ($5) were light and crispy and served with a chili-garlic dipping sauce. They quickly disappeared. We also vacuumed down an order of Black Salt & Szechwan Pepper Calamari with Sweet Garlic Lime Aioli ($8).”

Chernoff raves about Karma’s staff: “Service was attentive throughout, and the coffee was delicious, so we left refreshed and ready to face the world. We had found our inner zen.”

Chernoff also reviews contemporary Mexican restaurant, Guanajuato (73 Green Bay Rd., Glencoe; 847-242-0909). “We delved into the ‘Aperitivos’ with gusto, starting with creamy, fresh guacamole ($6.50, $8.50 with crudités). Coctel de Camarones ($10.95), a Mexican-style shrimp cocktail with lots of chopped shrimp tossed with avocado, onion, cilantro and jalapeño in a tangy tomato sauce, hit the spot.”

Chicago French Market events grab media’s attention
Chicago French Market (131 N. Clinton St., Chicago; 312-575-0306) frequently hosts events for its customers. Recent events include a Frietkoten’s Belgian Beer and Fry Tasting and a cooking demonstration by Chef Rocky Barnette of the non-profit organization Food & Water Watch. Chicago French Market also moved vendors such as Produce Express, Les Fleurs and Pop This! outside to have an outdoor market for the day.

Fresh Weekend Specials at Glen Prairie and Karma


Kick off the weekend by heading to Glen Prairie (1250 Roosevelt Rd., Glen Ellyn, Ill.) for farm-fresh weekend specials available after 5 p.m. Friday, September 11 and Saturday, September 12, in addition to the restaurant's regular menu. Chef Daniel Ovanin's specials will feature fresh produce from The Farm in Westmont, Ill., and Wolf Farms in Eau Claire, Mich.

Begin with the appetizer, Cucumber Salad, heirloom tomatoes, Mattawan Artisan Creamery Feta Cheese, red onion, fresh dill toasted pine nuts and balsamic truffle vinaigrette ($7).

Karma's Prix Fixe Menu for Just $20

Celebrate the beginning of fall and go easy on the wallet with chef Robert Packer's unbeatable $20 prix fixe menu from Karma (510 E. Route 83, Mundelein), offered in addition to the pan-Asian restaurant's regular menu. The three-course menu begins Sunday, September 6 and runs through Friday, September 11.

Begin with a starter, choosing from either the Miso Soup, tofu, sauteed shiitake mushrooms, scallions and roasted nori, or Karma House Salad, crisp lettuce, napa cabbage, cucumber, daikon and carrot ginger dressing.

Entree selections include a choice of either: Orange Peel Tempura Chicken, tempura fried chicken, sesame jasmine rice, ginger chilli cucumber salad and yuzu orange glaze; Thai Chili Beef, stir fried spiced beef tenderloin with Chinese noodles and baby bok choy, in mirin-miso beef broth (may be substituted for shrimp or chicken); or Yellow Mango Vegetable Curry, spring vegetables tossed with coconut yellow curry, jasmine rice and kimchi.

The brunch buffet features different stations, including the Salad Station; Seafood Station, with citrus poached King Salmon, peel-and-eat shrimp and Creole Bay Seafood salad; Made to Order Omelet Station; Breakfast Station, including ginger French toast, cheese blintzes with fruit compote, pepper cured bacon, country sausage links and breakfast potatoes; Savory Station, with roasted chipotle chicken, Asian BBQ salmon with sautéed vegetables, Dijon mustard and rosemary pork loin over pesto risotto; Carving Station, with herb and garlic crusted prime rib and honey baked ham; and Desserts, including assorted mini French pastries and bakery fresh tortes and pies. Karma’s spring menu features new seasonal entrees. Try Shaolin Grilled NY Strip, baby vegetables, shoestring potatoes, drizzled with mustard aioli and spicy tamari demi glace ($28); Shanghai Glazed Rib-eye, 14 oz. bone-in center cut steak served with a Shanghai sauce and garlic chive mashed potatoes ($27); Asian BBQ Salmon, forbidden rice, sweet potato crisps, wok-tossed spinach, Napa cabbage and shiitake mushroom ($19); and Yellow Mango Vegetable Curry, spring vegetables tossed with coconut yellow curry, jasmine rice and kimchee ($15).

Karma also celebrates National Sake Month (April) by offering the Hakutsuru Junmai sake, normally $11, on special for only $7 throughout the month of April.
