Congratulations to Kurman clients featured in Zagat’s 2010/11 Chicago Restaurant Guide

The people have spoken. Kurman clients including Restaurant Michael, Glen Prairie, May Street Market and Act One Café have made the cut for the 2010/11 Zagat Chicago Restaurant Guide.

• Listed HIGHEST of ALL for “Worth the trip” with a score of 28.

Weekly Specials at Restaurant Michael: July 30-31

This week's special at Restaurant Michael comes with a twist. There will be TWO specials running on TWO different days.

On Friday, July 30, Restaurant Michael features a gorgeous dish that Chef Michael Lachowicz is quite certain cannot be found anywhere else in the Midwest: Filet of Beef Tenderloin "En Croute" in the style of Paul Bocuse. This is a dish Chef Lachowicz learned to create at Maxime's Restaurant Francais in Westchester, New York. Maxime Riberra prepared this dish for the Bocuse D'Or, a prestigious event held each year to honor Master Chef Paul Bocuse. A signed photo of Mr. Bocuse hangs in Michael's kitchen watching over the Restaurant Michael team for inspiration.

The dish is a whole roast tenderloin of beef wrapped in veal and truffle mousse and then in a puff pastry and baked. This lovely creation is sliced and served medium rare over Port wine and truffle sauce. Chef Lachowicz promises that diners "will be stunned by this dish!" What's better is the dish is only $29 a la carte, and will be part of the prix fixe menu.

Saturday, July 31, Restaurant Michael features a classic favorite: Whole Roast Dover Sole with a choice of sauce, wild rice pilaf and seasonal vegetables. Restaurant Michael launches Premier Guest Dining Program

Michael Lachowicz, chef/owner of Restaurant Michael—an upscale haute French restaurant in Chicago’s North Shore—has created his own frequent diner program to reward its most valuable customers in a still struggling economy. Dubbed “Restaurant Michael’s Premier Guest Dining” program, Lachowicz’s dining plan offers pre-purchased house accounts, discounted 25 percent and usable without any restrictions.

“The Premier Guest Dining Plan has rewarded my valued customers for their years of appreciated patronage and loyalty,” says Lachowicz who opened Restaurant Michael in 2005. “This discounted dining option has served to lighten the burden of the economic turmoil and ensure customers a high quality dinner.”

Guests who purchase the plan receive $1.25 for every $1 purchased. Accounts are purchased in blocks of $500 each. Therefore, patrons purchasing $500 receive a house account of $625; $1000 buys $1250 in dining; and so forth. Guests purchasing $5,000 plans earn a bonus $250 for a total of $6,500 in Restaurant Michael cuisine.

There are no restrictions for when the dining credits are used. Lachowicz has said the program, which quietly launched several months ago, has been very successful for in-home catering and office parties. Guests may use the credit for regular dining, business dining, private parties, gift certificate purchases and holiday dining. Patrons may even use the dining plan for employee bonsus with written consent from the account holder.

Free Release Tuesday: Raise money for the independent film “Using” at Park West August 31

Support the independent motion picture Using with Emmy nominated actor and guest star, Terry O’Quinn from ABC’s Lost. Fasta Pasta Now Open at Chicago French Market; Frietkoten Now Serves Belgian Beers

Chicago French Market (131 N. Clinton St., 312-575-0306), located in the West Loop/Fulton River District, opened its newest vendor July 6, Fasta Pasta, adding to nearly 30 individual vendors found at the market. The new vendor joins added options at Chicago French Market, including the addition of Belgian beer, now served at Belgian fry shack Frietkoten.

Fasta Pasta's Made to Order Fresh Pasta
Fasta Pasta, a new, European-inspired fast-casual booth, allows customers to choose their pasta and sauce from a daily variety. The meal is cooked to order and served fresh in a recyclable container in less than two minutes, perfect for eating right away, or taking back to the office or home.
Customers begin by choosing pasta, like Fusilli, Campanelli and Whole Wheat Penne; or choose a premium pasta, from a selection that includes Beef Tortellini, Mushroom Ravioli and Gnocchi. Sauce choices include Marinara and Alfredo; or for a low extra price, premium choices include Vodka, Sweet Red Pepper Basil or Bolognese. Complimentary topping choices include Parmesan and Fresh Basil. For protein lovers, premium additions to the pastas like Meatballs and Chicken are also available. Customers have already been returning to Fasta Pasta to try the many different combinations that enable them to create their "own" special pasta.

Frietkoten Now Serves Belgian Beer
Frietkoten, the traditional Belgian fry shack at Chicago French Market, now serves Belgian beer Monday through Saturday to complement its traditional, hand-cut Belgian fries.

The seasonal, well-balanced selection features beers on tap: Avril Biere de Table and Debuisson Cuvee Des Trolls, Blond Ale. Beers are also served by the bottle and include Christoffel Blond, Blanche du Bruxelles, Witkap Pater Abbey Single Ale, De Koninck Belgian Pale Ale, Urthel Saisonniere and many more, including three organic brews.

Drafts are served in a 12-oz. glass and are best paired with Frietkoten's traditional Belgian fries, served with a choice of one of Frietkoten's 20 different sauces.

At Guanajuato, tequila shines as the star of the show

Guanajuato’s appeal lies not only in its passion for authentic cuisine and beautiful décor, but also in its creative, comprehensive approach to tequila. More than 40 tequilas are included in the bar menu—tequila aficionados have their choice of savoring it by the shot or as an ingredient in a creative selection of specialty cocktails and margaritas.

To build an outstanding tequila program, owner Mark and chef/owner Margarita Challenger worked with wine and spirits consultant and certified sommelier Michael Bottigliero, who is also known for his popular blog, www.windycitywineguy.com.

“We wanted to offer a wide selection of tequilas that are clearly not run of the mill,” said Bottigliero. “These are best rated tequilas chosen to showcase the breadth and depth of the tequila experience. The list features tequilas that are not typically found in restaurants and nightclubs. Some, like the Casa Noble Single Barrel Extra Anejo, are organically produced as well.”

Guests at Guanajuato can choose from blanco, reposado, añejo and some extra special selections. Most of the tequilas are priced at $7-$9 per shot, but the best tequilas, which can be compared in quality to fine aged cognac, are priced from $15.50 to $71. These special tequilas are served in a snifter to bring out the best of the magnificent bouquet. The Patron Gran Burdeo Anejo, at $71, is an ultra-premium dark tequila which is triple distilled, velvety smooth and aged for at least 12 months in American or French oak barrels, distilled again, and racked in hand-selected Bordeaux barrels, adding the flavors of vanilla, raisons and dried fruit which are found in the greatest Bordeaux wines.

Guanajuato also offers a tequila flight program: three different tequilas served with salt and lime and garnished with a grilled scallop. Margarita lovers need not fear—there are five flavors of margaritas which can be ordered on the rocks, straight up or frozen. There is also an expansive specialty cocktail list featuring all natural ingredients.

The wine program also features selections that are not typically found elsewhere. They were chosen because they pair well with Guanajuato’s contemporary Mexican cuisine.

Tequila explained
It is a colorless or pale straw-colored distilled spirit made by fermenting and distilling the sweet sap of the agave plant. Tequila is made in and around the small town of Tequila, in the highlands northwest of Guadalajara, which is in the western Mexican state of Jalisco. The blue agave thrives in the red volcanic soil of these areas, and more than 300 million agave plants are harvested there each year.

According to the Food Lovers Companion, in order to be classified as tequila, a distilled spirit must be produced from blue agave plants grown in a precisely delineated area in the five Mexican states of Guanajuato, Jalisco, Michoacan, Mayarit and Tamaulipas. Tequilas labeled "100% Blue Agave" are considered the best. Mexican law states that tequila must be made with at least 51 percent blue agave; the remaining 49 percent is most commonly sugarcane, although other raw products may be used.

Tequila can be produced with an alcohol content that ranges from 35% to 55% (70-110 proof), but most is made within a range of (76–80 proof). Most bottled tequilas are 80 proof, and many distillers will distill to 100 proof and then dilute it with water to reduce its harshness. Some of the most well respected brands distill the alcohol to 80 proof without using additional water as a diluter. Some of the aged versions are bottled at higher alcohol levels.

There are four categories of tequila: blanco, joven abocado, reposado and añejo. Tequila blanco (also known as white, silver or plata) is bottled soon after distillation. Its smooth, fresh flavor has an herbaceous, peppery quality. Tequila joven abocado (also called gold) is a tequila blanco with flavoring and coloring added; it doesn't have to be aged. Tequila reposado may also contain added flavoring and coloring and must be aged at least two months but can be aged for up to a year. The wood aging (usually in oak) endows reposados with hints of vanilla and spice and produces character more mellow than that of tequila blanco. Some reposados also use the word "gold" on their label, which gives the impression that golds have been aged, although there's no such legal requirement. Tequila añejo is aged for at least one year (and often two to three years). The smooth, elegant and complex flavor of the best añejos is often compared to that of fine cognacs.

Tequila continues to grow in popularity in the United States. While tequila is the eighth largest spirits category in the U.S. with approximately 9.1 million nine-liter cases, representing less than 6 percent of the total distilled spirits market, it’s the fastest growing segment. Tequila's growth has outpaced most other major spirit categories over the last decade and some analysts see no immediate end to its continued growth.

Tequila usage is likely to continue its strong growth over the long term, due to the influence that the growing Mexican population has on U.S. culture, including food and beverage.

The margarita cocktail continues, by far, to be the most popular way tequila is served. However with the advent of mixology as a serious culinary discipline, tequila is finding its way into a deeper and broader range of beverages and cocktails.

About Lasik Laser Vision Correction

Lasik is an outpatient surgical procedure that reduces or eliminates a person’s need for glasses or contact lenses. LASIK is an acronym for Laser-Assisted In Situ Keratomileusis, works by changing the shape of the cornea. An instrument is used to make a flap or opening in the cornea and then the Excimer laser precisely reshapes the cornea so that light is then focused properly in the eye. The corneal flap is then replaced and in most cases, patients have excellent vision the next day. This life-changing procedure was developed as a combination of an older procedure called Automated Lamellar Keratoplasty (ALK) which made flap corneal flaps. When the extraordinary precision of the Excimer laser was added to a cornea that had had a flap, Lasik was invented. This was first accomplished in 1993 by a Greek ophthalmologist by the name of Ioannis Pallikaris. This allowed the longer healing of the Excimer laser procedure, Photorefractive Keratectomy (PRK), to use the precision of the laser but to eliminate most of the discomfort and the extended healing. Modern Laser Vision Correction uses advanced measuring systems called WaveFront analysis to measure and then treat each patient’s visual system using technology that was developed to focus the Hubble telescope that allows significantly better results that with earlier technology.

Governor Quinn Speaks at River North Business Association Quarterly Luncheon July 13

Join the River North Business Association for a luncheon with Illinois Governor Pat Quinn, 11:30 a.m. - 1:30 p.m., Tuesday, July 13 at the Holiday Inn Chicago - Mart Plaza (350 W. Mart Center Dr., 15th floor, Wolf Point Ballroom).

The Governor's going to discuss job creation, growing the Illinois economy and his vision for moving the state forward. If you are interested in learning more about Governor Quinn's positions and hear him discuss his vision for Illinois' future, come to the River North Business Association quarterly luncheon and hear it first hand. He will accept questions from the audience.

The event includes a registration and Networking from 11:30 a.m. until 12 p.m., Lunch at 12 p.m. until 12:45 p.m. and program with a question and answer session with Governor Quinn from 12:45 p.m. until 1:30 p.m.

Summer Menu Starters from May Street Market

Enjoy fresh, new summer menu selections from chef Alex Cheswick at May Street Market. Try Grilled Watermelon Salad, yellow watermelon shooter, mixed baby greens, avocado jalapeño Key Lime vinaigrette, candied cashews and local aged cheddar ($6/$12); Pork Belly, Caramel Corn, 12-hour braised pork belly, corn polenta, caramel popcorn and cherry cola reduction ($8); and Stuffed Dates and Chorizo, wrapped in Applewood smoked bacon, smoked onion purée and roasted marinated peppers ($5/$10).

Peter Klein of Seedling Farms and May Street Market chef/owner Alex Cheswick host a Very Berry Dinner, a four-course prix fixe meal for just $29 per person, offered 6 p.m. Thursday, July 22, with an encore menu 6 p.m. Thursday, July 29.

The evening begins with a Cocktail Reception, sparkling wine with wild strawberry purée. For the first course, enjoy Glazed Seared Scallops, with smoked raspberry chipotle brown butter, water chestnut purée and wasabi pea. The next course is Summer Salad with Blackberry Ice Popsicle, Greek yogurt balsamic dressing, blackberry preserve and Grape Nut granola. Entrée choices include Sous Vide Hanger Steak, with risotto from blueberries and Tellagio cheese and berry basil pesto, or Grilled Tilapia with Black Olive Crust, gooseberry emulsion, braised summer squash and pistachio polenta. For dessert, enjoy Berry Gazpacho with rhubarb sorbet, organic steel oats crumble and wild honey ice cream.

Enjoy May Street Market’s affordable three-course, $25 prix fixe menu, offered Monday through Saturday evening, and with BYOB Monday through Wednesday. Chef/owner Alex Cheswick hand selects each ingredient for the meal.

For appetizer, choose between Summer Salad, mixed baby greens, local mesclun, avocado jalapeño lime vinaigrette, cherry tomatoes and candied cashews; Local Vegetable Gazpacho; Pork Belly, Caramel Corn, 12-hour braised pork belly, corn polenta, caramel pop corn, cherry cola reduction and pickled cabbage; or Blue Corn Calamari, cilantro vinaigrette and banana chipotle aioli.
