Fleming's proprietary collection of 100 wines by the glass is a unique approach to discovering and celebrating wine without having to order an entire bottle. The new collection for 2012/2013 features many iconic wineries from California as well as top-rated European wineries. “Bottle Wars” Wine Tastings – Featuring Rival Wines from the New Fleming's 100
"Bottle Wars" is a series of four unique wine tastings to be held on successive Friday evenings in September (7th, 14th, 21st and 28th). Guests will taste premium wines from rival regions and wineries around the world in a spirit of friendly competition. Each event will offer 8 to 10 well-matched wines for just $25* and Fleming's professionally trained wine managers will guide guests through the experience:


"Pinot Smackdown" (September 7th) -- Pinot Noirs from California’s Central Coast compete against Pinot Noirs from Sonoma, Oregon and the Anderson Valley.
"Battle of the Hemispheres" (September 14th) -- California takes on South America, Australia, New Zealand and South Africa.
"Old World vs. New World" (September 21st) -- European masters from France, Italy, Germany and Spain go against the best and brightest winemakers from California.
"Glass Warfare" (September 28th) -- Premium wines and value-priced wines made from similar grapes are put to the taste test.

Fleming's New Memorable Meal for Two -- $99 for 3 Courses
Fleming's celebrates its new wine collection with a prix-fixe menu for two, available from September 1st through September 30th. Each guest will enjoy a triple entrée of broiled filet mignon, herb baked shrimp and braised short rib, with shrimp bisque and a dessert of frozen almond soufflé. The 3-course menu is priced at $99 for two, and $49.50 for one. For an additional $25, each guest may order a specially priced flight of three wines -- The Prisoner, Primus Cabernet and Quintessa 2006 -- all from the Huneeus Vintners Portfolio.

Celebrate Chicago Restaurant Week!

To many people, the middle of February simply means winter, but for Chicago restaurants, this time of year is a cause for celebration. February 17 through 25 food enthusiasts’ favorite event: Chicago Restaurant Week. During this week, many restaurants in Chicago offer special prix-fixe menus for diners to experience some of their favorite restaurants or discover new favorites for a great value. With the amount of great restaurants in Chicago, choosing from the long list of participating restaurants can be daunting. Here are some of our favorite suggestions.

Francesca’s restaurants have three Chicago locations participating in Restaurant Week. Francesca’s Bryn Mawr (1039 W. Bryn Mawr Ave., Chicago, IL 60660; 773-506-9261), Francesca’s on Taylor (1400 W. Taylor St., Chicago, IL 60607; 312-829-2828) and Francesca’s on Chestnut (200 E. Chestnut St., Chicago, IL 60611; 312-482-8800) will all feature special Restaurant Week menus for lunch and dinner. The four-course lunch menu is $22 per person. The lunch menu includes Bruschetta alla Romana served with a cup of their soup of the day, a choice of Francesca Salad or Asparagus Salad, an entrée choice of Ravioli ai Spinaci or Pollo alla Romana, and a dessert choice of Tiramisu or Profiteroles. Francesca’s five-course dinner menu starts with a choice of Bruschetta alla Romana or Calamari fritti. The menu continues with a choice of Francesca Salad or Asparagus Salad, a pasta choice of Ravioli ai Spinaci or Rigatoni alla Bolognese, and an entrée choice of Pollo al Limone or Tilapia con Funghi. The menu concludes with a choice of Tiramisu or Profiteroles. The dinner menu is $33 per person.

Fleming’s Prime Steakhouse & Wine Bar (25 E. Ohio St., Chicago, IL 60611; 312-329-9463) features a Restaurant Week menu for dinner. Their three-course menu is $44 per person. The first course is a choice of Newport Beach Clam Chowder or Fleming’s Salad with cranberries and candied walnuts, tossed in a lemon balsamic vinaigrette. This is followed by entrée choices which include a Petite Filet of their most tender filet beef, Double Breast of Chicken baked in a white wine, mushroom, shallot and thyme sauce, or Scottish Salmon served with a barbeque glaze and three mushroom salad. Diners have a choice of Mashed Potatoes with blue cheese, parmesan peppercorn or roasted garlic or Creamed Spinach as their side. The menu ends with a choice of two of Fleming’s amazing desserts, Crème Brule, creamy Tahitian vanilla bean custard with fresh seasonal berries or Cheesecake with white chocolate and blueberries.

Fleming's Hosts Benefit for Supreme Court candidate Joy Cunningham


This evening, Wednesday, February 8, Fleming’s Prime Steakhouse & Wine Bar (25 E. Ohio St., Chicago, IL 60611; 312-329-9463) is hosting a benefit for Illinois Supreme Court candidate Joy Virginia Cunningham from 5:30 to 7:30 p.m.


The event will feature some of Fleming’s fine wines paired with their incredible appetizers and small plates. Several business, philanthropic and community leaders will also be in attendance, and Cunningham will be making a special appearance. Guests will have the opportunity to speak with Cunningham and hear about her experiences and qualifications to serve on the Illinois Supreme Court. Combined with the sophisticated social atmosphere of Fleming’s and their delicious food and wine offerings, the evening is sure to be enjoyable.


With more than 35 years of professional experience, Joy Cunningham is an experienced and passionate public servant whose life is dedicated to the welfare and security of her fellow Americans.  Her professional life is focused on two of the most important issues of our time—health care and justice. A former critical care nurse and a graduate of John Marshall Law School, Cunningham has enjoyed a long and successful career in the business world. She has served as a Cook County Court Associate Judge, on the Illinois Appellate Court’s First District, Second District and the Appellate Court’s Executive Committee, and was the first African-American woman to be elected president of the Chicago Bar Association, the largest municipal bar association in the United States. Today, Justice Cunningham has the chance to make history once again as the first African-American woman elected to the Illinois Supreme Court.

Fleming's Lincolnshire Presents Wine Tasting Under the Stars

Join Fleming’s Prime Steakhouse & Wine Bar (960 Milwaukee Ave., Lincolnshire, Ill., 847-793-0333) for Wine Tasting Under the Stars featuring Stags’ Leap Winery 6:30 p.m. Saturday, August 27. The event will pair hor d’oeuvres with four extraordinary Stags’ Leap wines. Tickets are $59 per person (excluding tax and gratuity).

The evening’s grazing menu starts off with Crispy Prosciutto Cups topped with tomato, basil and fresh mozzarella; Shrimp Scampi Skewer served with avocado, orange, red onion and fennel with a chimichurri dipping sauce and Crab Salad with a citrus aioli served in an endive leaf with Stags’ Leap Viognier, Napa Valley 2010.

Next, Ahi Tuna Skewers poppy seed and peppercorn crusted paired with tomato vinaigrette and wasabi aioli; Champagne Poached Lobster Rangoon served with a lobster butter sauce paired with Stags’ Leap Chardonnay, Napa Valley 2009. Followed by Lamb Chops, marinated in balsamic and herb oil served with crispy polenta fries and pistachio mint pesto with housemade F17 sauce and Smoked Duck Crostini with tomato jam layered with thin sliced smoked duck topped with crispy pancetta and bitter greens with a plum honey vinaigrette paired with Stag’s Leap Petite Syrah, Napa Valley 2007.

Followed by Grilled Wild Mushrooms served on crispy polenta topped with a balsamic glaze; Sliced Filet Skewers served over shiitake and parmesan risotto quenelles drizzled with porcini mushrooms sauce and Sriracha chili oil paired with Stags’ Leap Cabernet Sauvignon, Napa Valley 2007. The evening will end with the dessert course featuring Mini Lava Cakes and Mini Crème Brûlée.

Fleming’s Prime Steakhouse & Wine Bar Presents Silverado Wine Dinner

Fleming’s Prime Steakhouse & Wine Bar (25 E. Ohio St., Chicago; (312) 329-9463) is hosting Silverado Vineyards at a wine dinner 6:30 p.m. Friday, July 29—showcasing five exceptional wines with winemaker and spokesperson Jon Emmerich.
The dinner starts with a reception course consisting of Chicken Saltimbocca, Ahi Tuna on wontons and Prosciutto Wrapped Asparagus Spears paired with Silverado “Miller Ranch” Sauvignon Blanc, Yountville, Napa, 2009. The first course is Scallops with Meyer lemon honey glaze paired with Silverado Estate Chardonnay, Napa County, 2009. The second course is Heirloom Tomato and Fresh Mozzarella with basil, EVOO and aged balsamic vinegar paired with Silverado Estate Merlot, Napa Valley, 2006. The main course is a Petit Filet Mignon, chimichuri and F17 sauces with roasted Yukon potatoes and Green City Market vegetables paired with Silverado “Solo” Cabernet Sauvignon, Stags Leap District, Napa Valley, 2007. About Jon Emmerich
Jon Emmerich, raised in Redwood City—a suburb south of San Francisco, has grown Silverado Vineyard’s reputation for quality and consistency. He attend college at UC Davis, where he enrolled in the Fermentation Science program—introducing him to the world of California wine. Emmerich’s passion led him and his roommate to use their dorm room as a place to make wine. He later took an internship in France where he learned more about traditional wine making craft.
Emmerich received a BS in Fermentation Science from UC Davis and started working a harvest at Stags Leap Wine Cellars. He went on to work at Conn Creek Winery and Sebastiani and in 1990 joined Silverado Vineyards.

Emmerich wears many hats at Silverado Vineyards, from managing winemaking to meeting consumers on the road. He is also currently on the Board of The Trellis Alliance, an advisory committee to the UC Davis Viticulture and Enology Department. In the past, Emmerich has held presidential positions of the Napa Valley Wine Tech Group and the Winemaking Techniques Committee of the California Enological Research Association.

Fleming's Prime Steakhouse & Wine Supports Diners with Special Dietary Needs

Restaurant Honors National Celiac Awareness Month by Making the Best in Steakhouse Dining Appropriate for all Diets

May is designated National Celiac Awareness Month, and Fleming’s Prime Steakhouse & Wine Bar (25 E. Ohio St., Chicago; (312) 329-9463 and 960 Milwaukee Ave., Lincolnshire, Ill.; (847) 793-0333) wants those who have celiac disease (CD) to enjoy a meal out without the concern over their dietary restrictions.  This is a great time for diners who are simply considering a gluten-free lifestyle to let someone else do the cooking.   

“As the executive chef of Fleming’s, I take our guests’ dietary needs as seriously as they do,” says Fleming’s Executive Chef Russell Skall.  “This is why we have such an extensive gluten-free menu without a lot of substitutions required.  We want our guests to experience what eating at Fleming’s is all about by enjoying all of the great flavors offered with our appetizers, salads, entrees, sides and tempting desserts.  Because we make everything from scratch, our chefs can ensure that every meal is the best it can be,” he adds.

Fleming’s offers guests a gluten-free menu which is also available online. Upon arrival at the restaurant, guests are advised to tell their servers that they are ordering gluten-free.   

Numerous appetizers can be ordered as they are indicated on the menu, such as the shrimp cocktail, butternut squash soup, cream of asparagus soup and lobster bisque.  Other dishes can be customized for a gluten free experience.  Appetizers like the tenderloin carpaccio, wicked Cajun barbeque shrimp and seared ahi tuna can be ordered without croutons, bread or mustard sauces to make the dish gluten-free. Most salads may be ordered without croutons; while others such as the lobster Cobb and filet mignon Cobb can be made gluten-free by removing the puff pastry and substituting the dressing (all salad dressings are gluten-free except the red onion balsamic dressing).

Dinner entrees like Australian lobster, tuna mignon, Alaskan king crab and any of the meat selections can be ordered as is for a gluten-free meal.  Other seafood dishes like the barbeque Scottish salmon filet and the seared scallops can be adjusted for guests with a gluten-free diet. 

No meal is complete without sides, so Fleming’s ensures there is a selection of side items for everyone.  On the dinner menu, gluten-free sides include baked potato, Fleming’s potatoes, green beans, mashed potatoes, sautéed spinach, sautéed mushrooms and grilled asparagus. Fleming’s even satisfies every sweet tooth with several gluten-free deserts: crème brûlée, mixed berries with whipped cream and vanilla ice cream with raspberry or fudge sauce.

The young women of Nehara Hadassah will model trendy casual and active wear fashions accessorized by jewelry from Sweet Magnolia.

Revana Vineyard Wine Dinner with Owner Dr. Madaiah Revana at Fleming's, Jan. 29


Join Fleming’s Prime Steakhouse & Wine Bar (25 E. Ohio St., 312-329-9463) at 6:30 p.m. Saturday, Jan. 29 for a one-night celebration of top wines from critically acclaimed Revana Family Vineyard in Napa Valley, including their superb 2007 Cabernet Sauvignon, ranked #4 on Wine Spectator’s Top 100 List for 2010. The cost to attend is $125 per person, including the wines.

This event also features selections from Revana’s sister winery Alexana in Willamette Valley, Ore., all paired with a special five-course menu created by Fleming’s Chef Partner Jerl Griffin. Women and Wine Dinner at Fleming's, October 22

Fleming’s Prime Steakhouse & Wine Bar continues to celebrate National Breast Cancer Awareness Month with a special “Women and Wine” dinner Friday, October 22 at 6:30 p.m. The dinner is $95 per person and offered at both Fleming’s Prime Steakhouse Chicago locations: 25 E. Ohio St., Chicago; and 960 Milwaukee Ave., Lincolnshire.


In a field once dominated by men, female vintners are turning out some of the very best wines on the market today. Fleming’s is proud to showcase the work of three leading women winemakers with this exclusive four-course dinner during their ongoing celebration of National Breast Cancer Awareness Month.

This unique wine dinner features a trio of handcrafted premium wines, each personally selected by Fleming’s Director of Wine Marian Jansen op de Haar, paired with an exceptional four-course menu created by Fleming’s Executive Chef Russell Skall.


Passed Hors d’oeuvres include Swiss Cheese Puffs, House Cured Salmon, Citrus Crème Fraiche and Crispy Wonton paired with CORISON, Cabarnet Sauvignon Napa Valley, 2000 (Winemaker: Cathy Corison). The appetizer is a Butternut Squash Bisque with Danish Blue Cheese Fondue and Bacon Herb Bruschetta, paired with HONIG, Carbernet Sauvignon Napa Valley, 2006/2007 (Winemaker: Kristin Belair). During the month of October, Fleming’s Prime Steakhouse & Wine Bar is urging everyone to “Drink Pink For The Cause!” by indulging in its new specially created cocktail, the Stoli Bombshell. During the month of October, 100% of the sales for each Stoli Bombshell will benefit the Avon Breast Cancer Crusade, which supports finding a cure for breast cancer and advancing access to care for all, regardless of one’s ability to pay.

The Stoli Bombshell is served nightly for $6 in Fleming’s Bar and Main Dining Room at two Chicago area locations: 25 E. Ohio St., Chicago, and 960 Milwaukee Ave., Lincolnshire. 

At only 99 calories, the Stoli Bombshell luxuriously combines Stoli Vanil vodka, fresh raspberries, raspberry preserves and freshly squeezed lime juice, served straight up in a martini glass.
