Fleming's celebrates its new wine collection with a prix-fixe menu for two, available from September 1st through September 30th. Each guest will enjoy a triple entrée of broiled filet mignon, herb baked shrimp and braised short rib, with shrimp bisque and a dessert of frozen almond soufflé. The 3-course menu is priced at $99 for two, and $49.50 for one. Fleming's hosts the "Under the Stars" Summer Wine Dinner, August 3

Fleming’s Prime Steakhouse & Wine Bar (960 Milwaukee Avenue, Lincolnshire, IL 60069; 847-793-0333) will host the “Under the Stars” Summer Wine Dinner 7 p.m. August 3.  Guests will enjoy a special summer dinner featuring 90-point wines from Napa Valley and Washington State, paired with a five-course menu developed by Chef Partner, Roger Abuan.  The meal will be served on the beautiful outdoor patio and guests will enjoy commentary by special guest speaker Kelley Joerns from Chateau Ste. An extensive choice of appetizers, entrees and desserts will be available for brunch and include starter options like The Wedge, with iceberg lettuce, grape tomatoes, red onions and crumbled blue cheese, or a Fresh Fruit Medley of berries, melon, pineapple, sour cream and honey sauce.  Entrée options include Filet Mignon Benedict with sliced filet mignon and egg on an English muffin with herb béarnaise sauce and tomato concassé and New Orleans-Style French Toast. Dessert choices include Chocolate Bread Pudding with bourbon crème anglaise and Walnut Turtle Pie, with house made caramel, walnuts and chocolate in a chocolate pie crust.  Fleming’s also will be offering its  Blood Orange Mimosa, a festive and refreshing sparkler with Solerno Blood Orange Liqueur, Mionetto Prosecco and freshly squeezed orange juice for $7.95.

Maxwell’s at the Club Annual Father’s Day Brunch

Maxwell’s at the Club (200 N. Kingsbury St., Chicago, IL 60610; 312-527-5800) will offer its annual Father’s Day brunch from 10 a.m. – 2 p.m., Sunday, June 17.

Fleming’s Prime Steakhouse & Wine Bar Debuts Bar la Carte Menu

 Fleming’s Prime Steakhouse & Wine Bar (25 E. Ohio St., Chicago, 312-329-9463 and Lincolnshire, 960 Milwaukee Ave., Lincolnshire, 847-793-0333) continues to set the standard in steakhouse dining with the introduction of its new Bar la Carte Menu. Served exclusively in the bar, the menu offers Fleming’s guests six all-new satisfying dishes available any time, any evening. More substantial than appetizers or the typical “bar bites” found at many restaurants, the addition of this Bar la Carte menu makes Fleming’s bar as much a destination for food as it is for wine and cocktails.
   
“Our Bar la Carte menu is a reason to visit Fleming’s any night of the week,” says Russell Skall, Fleming’s Executive Chef. “This isn’t what you usually think of as bar food, instead these are distinctive dishes with a great mix of bold flavors and textures, served in generous portions meant for sharing. Even in the bar, we want to offer our guests a memorable dining experience.”


Each dish had to pair well with both wine as well as a variety of cocktails and beer, and be easily sharable. After a full year of testing and tasting six new items were selected.

The new Bar la Carte menu includes: Salt and Pepper Shrimp served with crispy fried green beans, thin slices of lemon, and a caper-mustard dipping sauce; Prime Steakhouse Meatballs in a spicy peppercorn sauce with shitake mushrooms; Fleming’s Original Prime Rib Melt is slow roasted prime rib stacked on a toasted parmesan baguette with Swiss cheese, sautéed mushrooms, whole-grain mustard, horseradish slaw, and au jus for dipping; Filet Mignon Flatbread is topped with Danish Blue and Monterey jack cheeses, and red onion confit; Cedar-Roasted Mushroom & Artichoke Flatbread has Monterey jack cheese, roasted Christopher Ranch garlic, and roasted red peppers; and Fleming’s Housemade Burrata is served with charred cherry tomatoes, fresh wild arugula, and toasted garlic crostinis.

One additional offering, the Prime Burger, is borrowed from Fleming’s celebrated “5 for $6 ‘til 7” menu. It is served with Wisconsin cheddar cheese, peppered bacon and Fleming’s signature onion rings. “When we were tasting new dishes for the Bar la Carte menu, we knew we had to include the Prime Burger,” comments Skall. “It’s unbelievably popular.”

Fleming’s Prime Steakhouse & Wine Bar Hosts the Cakebread Cellars Wine Dinner

Fleming’s Prime Steakhouse & Wine Bar (960 Milwaukee Ave, Lincolnshire, IL 60069 847-793-0333) will host the Cakebread Cellars Wine Dinner 7 p.m. Friday, May 18.   The lavish dinner will feature an exceptional five course menu, created by Chef Partner Roger Abuan, paired with five estate-bottled wines from Cakebread Cellars. The meal will begin with Grilled Pizza, with shrimp, cherry tomatoes, and arugula paired with CAKEBREAD, Sauvignon Blanc Napa Valley, 2010.  Next will be a Fleming's Crab cake with avocado, aioli, spring mix salad which will pair perfectly with CAKEBREAD, Chardonnay Napa Valley, 2009.  The third course will be Paella of Duck, with Andouille sausage, shrimp and roasted pepper paired with CAKEBREAD, Pinot Noir Anderson Valley, 2009.  The next course will feature Grilled Prime New York Strip with celery and blue cheese relish which will pair beautifully with CAKEBREAD, Cabernet Sauvignon Napa Valley, 2009.  Finally, the dessert course will feature Panna Cotta with strawberry and rhubarb marinated in balsamic paired with CAKEBREAD, Vin de Porche Rosé, 2011.

Fleming's Extends Icon Wine Offering to May 31

Fleming’s Prime Steakhouse & Wine Bar has extended its April Icon Wine through May 31.  Dubbed “The King of California Chardonnay”, Kistler Les Noisetiers Chardonnay Sonoma Coast 2010 is now available for $60 per bottle at both Chicagoland Fleming’s locations. Kistler has emerged as highly coveted among wine lovers and has proven difficult to acquire without the right connections.  “It just isn’t easy to get your hands on a bottle of Kistler Chardonnay,” says Maeve Pesquera, Wine Director of Fleming’s.  “It’s like you need a secret handshake or something.”  

Almost the entire production is sold via a private mailing list before the bottles have been packaged.  “There are hundreds and hundreds of people on the waiting list just for the chance to purchase a few bottles directly from the winery,” says Pesquera.  The few left over leave just enough to distribute to a selection of fortunate restaurants throughout the country. 

Kistler Brothers, John and Steve, have all but perfected the art of wine making.  Each of their Napa Valley vineyards grows an identical heritage Chardonnay clone and is vinified in the exact same fashion.  The only difference is the location of the vineyard.  The lower yield of the fruit is what aides in the extraordinary flavor properties; yielding only about two tons per acre when the average is about six tons.

Fleming's to host Justin Winery dinner March 23 in LIncolnshire with Master Sommelier Joseph Spellman

Fleming’s Prime Steakhouse & Wine Bar (960 Milwaukee Ave., Lincolnshire, IL; 847-793-0333) is hosting a Justin Wine Dinner 7 p.m., Friday, March 23. Master Sommelier Joseph Spellman of Justin Vineyards & Winery will be on-site to speak about the wines during the meal.

Fleming’s Lincolnshire Chef Partner Roger Abuan and Spellman have worked together to showcase  the best of food and wine for the dinner. The evening starts with a passed appetizer reception featuring Shrimp Crostini and Tapenade Crostini paired with Sauvignon Blanc Paso Robles, 2010. This is followed by a salad course, Seared Scallops, Lentil, Arugula and Belgian Endive Salad with a white wine vinaigrette. The second course is Braised Short Ribs and horseradish mashed potatoes with a balsamic reduction, which is paired with Justification Paso Robles, 2008. The third course features Grilled Lamb Chops with Ratatouille. This is paired with Cabernet Sauvignon Paso Robles, 2009 and Isosceles Cabernet Sauvignon Blend Paso Robles, 2009. Dessert is Chocolate Mousse Cake with Chantilly cream elegantly paired with Obtuse Port Paso Robles, 2009.

Fleming’s Prime Steakhouse & Wine Bar Debuts Small Plates; New 99 Calorie Cocktail

Fleming’s Prime Steakhouse & Wine Bar continues to set the standard in steakhouse dining with its introduction of seven Small Plates to its menu this week.


These lighter, healthier dishes represent a whole new way to dine at Fleming’s (25 E. Ohio St., Chicago; 312/ 329-9463 and 960 Milwaukee Ave., Lincolnshire, Ill.; 847/ 793-0333)– to be enjoyed anytime with a glass of wine, shared with friends, or as a starting course to a meal. 


They can even be an alternative to a large entrée. Fleming’s Small Plates are reminiscent of a Mediterranean style of dining and dishes like the Sliced Filet Mignon with Shiitake Risotto blend Asian influences with European flavors. Others like the Lobster Tempura are a variation on a Fleming’s favorite.



“One of my favorites is the Lobster Tempura,” says Russell Skall, Fleming’s Executive Chef. “We took a guest favorite that was an indulgent, high-calorie appetizer, and recreated it.


"You still have the succulent lobster and dipping sauce only now it’s paired with a salad and has only half the calories.”


Skall began creating and testing Small Plate combinations nearly two years ago. What started with close to 100 original dishes was paired down to 25, then 10, and finally the best seven that join the Fleming’s menu starting on September 21.


The seven new Small Plates include: Sliced Filet Mignon on shiitake risotto, chili oil, drizzled with porcini butter; Jumbo Shrimp Scampi Skewers with chimichurri dipping sauce and avocado citrus salad; New Zealand Petite Lamb Chops with pistachio-mint pesto, “F-17” sauce, and polenta fries; Ahi Tuna Skewers with wasabi aioli, sweet tomato vinaigrette, and homemade wonton chips; New Bedford Scallops with meyer lemon-honey glaze, baby carrots, green beans, and asparagus; Filet Mignon Skewers with gorgonzola-bacon fondue, mozzarella and sweet tomato salad; and Fleming’s Lobster Tempura with soy-ginger dipping sauce, arugula, jicama and apple salad.

“Small Plates let our guests customize their meal and their dining experience,” says Skall. “They are a direct response to requests we’ve received for more choice in portion size, light options and items to share.”


Fleming’s Small Plates range in price from $15.50 – $22.95. As with the majority of Fleming’s menu, they can be modified to be gluten free upon request. Guests also will find a contemporary new look and feel to Fleming’s menu designed to be lighter and easier to read and including original artwork from noted artist Thomas Arvid.


Also debuting this week is Fleming’s newest “5 6 7” bar menu with five wines from the new Fleming’s 100, Widmer Brothers Hefeweizen (available 2 for $6), and the Stiletto – a 99-Calorie cocktail in honor of Breast Cancer Awareness Month.

1 oz.  Monin sugar‐free vanilla syrup

10  Fresh mint leaves
2 oz.  Club soda
Ice cubes

DirectionsPlace mint leaves and lime juice in glass. Use a muddler to bruise the mint leaves and release the mint oils. (Don’t over crush.) Place Stoli Vanil, pineapple juice, sugar‐free vanilla syrup and ice in a cocktail shaker and shake thoroughly. Pour into the glass with mint leaves and top with club soda. Garnish with mint sprig.

Fleming's Prime Steakhouse & Wine Supports Diners with Special Dietary Needs

Restaurant Honors National Celiac Awareness Month by Making the Best in Steakhouse Dining Appropriate for all Diets

May is designated National Celiac Awareness Month, and Fleming’s Prime Steakhouse & Wine Bar (25 E. Ohio St., Chicago; (312) 329-9463 and 960 Milwaukee Ave., Lincolnshire, Ill.; (847) 793-0333) wants those who have celiac disease (CD) to enjoy a meal out without the concern over their dietary restrictions.  This is a great time for diners who are simply considering a gluten-free lifestyle to let someone else do the cooking.   

“As the executive chef of Fleming’s, I take our guests’ dietary needs as seriously as they do,” says Fleming’s Executive Chef Russell Skall.  “This is why we have such an extensive gluten-free menu without a lot of substitutions required.  We want our guests to experience what eating at Fleming’s is all about by enjoying all of the great flavors offered with our appetizers, salads, entrees, sides and tempting desserts.  Because we make everything from scratch, our chefs can ensure that every meal is the best it can be,” he adds.

Fleming’s offers guests a gluten-free menu which is also available online. Upon arrival at the restaurant, guests are advised to tell their servers that they are ordering gluten-free.   

Numerous appetizers can be ordered as they are indicated on the menu, such as the shrimp cocktail, butternut squash soup, cream of asparagus soup and lobster bisque.  Other dishes can be customized for a gluten free experience.  Appetizers like the tenderloin carpaccio, wicked Cajun barbeque shrimp and seared ahi tuna can be ordered without croutons, bread or mustard sauces to make the dish gluten-free. Most salads may be ordered without croutons; while others such as the lobster Cobb and filet mignon Cobb can be made gluten-free by removing the puff pastry and substituting the dressing (all salad dressings are gluten-free except the red onion balsamic dressing).

Dinner entrees like Australian lobster, tuna mignon, Alaskan king crab and any of the meat selections can be ordered as is for a gluten-free meal.  Other seafood dishes like the barbeque Scottish salmon filet and the seared scallops can be adjusted for guests with a gluten-free diet. 

No meal is complete without sides, so Fleming’s ensures there is a selection of side items for everyone.  On the dinner menu, gluten-free sides include baked potato, Fleming’s potatoes, green beans, mashed potatoes, sautéed spinach, sautéed mushrooms and grilled asparagus. Fleming’s even satisfies every sweet tooth with several gluten-free deserts: crème brûlée, mixed berries with whipped cream and vanilla ice cream with raspberry or fudge sauce.
