Zealous is celebrating 19 years in business this month, and as Michael Taus, chef/owner, continues to offer an award winning fine-dining experience to his patrons, he has proven he still knows how to produce a great cheeseburger.  Voted Chicago Magazine’s “Best Burger Ever” and Travel & Leisure’s “Top 10 Burgers in America” Zealous’ Z’ Burger is the pinnacle of a fine dining take on the all-around classic.  Served with Havarti cheese and tomato Remoulade on a house-made dill roll and served with fries, the highly coveted burger is available a la carte for $15.

Cheeseburger History
The history of the hamburger is not quite certain, but some sources believe Mongols riding on horseback started it all. They would stash meat in their saddles and ride around while conquering different territories, during which the meat would become tenderized enough for consumption. It is also believed that this practice was brought to Russia, where they adopted it as steak tartare. Years later, with global trade becoming more prominent, the idea was carried to the port city of Hamburg, Germany. There they decided to mold the meat into a shape resembling steak, and cook it; soon becoming known as “Hamburg Steak.” Even the origin of the modern cheeseburger is crowded in mystery, since more than one person claims to have placed the first slice of cheese on a beef patty. Was it Pasadena fry cook Lionel Sternberger in 1924 or Charles Kaelin years later in his Louisville restaurant? Today people don’t mind much where it was invented just as long as they can enjoy them this National Cheeseburger Day.

Under the helm of Master Winemaker MacLean, JAQK Cellars creates a variety of wines out of Napa Valley, including handcrafted Merlot, Chardonnay and Sauvignon Blanc.

"We are very pleased to be hosting this dinner along with JAQK Cellars Winemaker/Co-Founder, Craig MacLean," says Curtis Nordeen, Fleming's Prime Steakhouse Chicago operating partner. “JAQK Cellars has mastered its winemaking skills and produce varietals that are food-friendly and deliciously drinkable upon release.”

About JAQK Cellars
Based in San Francisco, JAQK Cellars is dedicated to creating distinctive wines in creative packaging. The company released its first vintage in 2008 after JAQK Cellars co-founding team Joel Templin and Katie Jain of HATCH, an award winning design firm that wanted to explore the world of wine, partnered with acclaimed Napa Valley winemaker, Craig MacLean. Serving as JAQK Cellars’ co-founder and winemaker, MacLean earned his master’s degree in Enology from U.C. Davis.

MacLean’s detailed winemaking history began with apprenticeships at Chappellet and Markham, before he crafted wines for Cain Vineyard and Winery as well as Spring Mountain Vineyard. He then authored Kelham-MacLean Wines. Craig has served as independent winemaker for a host of vineyards, including Ahnfeldt, Vito Bialla, Brookdale, Ilsley and Juslyn. The three friends hold a shared belief in the importance of getting together and enjoying each other’s company, agreeing that a bottle (or two) of great wine can be quite helpful in that regard. Fleming’s Memorable Meals: Maine Lobster & Seafood Boil for Two for $99

A New 3-Course Menu, Available for a Limited Time Only This Summer

Fleming’s Prime Steakhouse & Wine Bar kicks off summer with a Memorable Meal that recalls the spirit of a picnic on the rocky shores of the New England coast. Through August 15, guests can enjoy a Maine Lobster & Seafood Boil for two for $99 at two Chicago area Fleming’s Prime Steakhouse locations: 25 E. Ohio St., Chicago, Ill., and 960 Milwaukee Ave., Lincolnshire, Ill.

Created by Executive Chef Russell Skall, Fleming’s Prime Steakhouse Memorable Meals bring back favorite dining experiences – the ones that capture the place, the time, the flavors and the people you share them with. The Memorable Meals have been implemented locally by Chef Partner Jerl Griffin at Chicago and Chef Partner Roger Abuan at Lincolnshire. Chef Skall’s inspiration for this summer tradition starts with fresh Maine lobster.

"One of my favorite ways to enjoy Maine Lobster is in a traditional New England Seafood Boil," says Chef Skall. "It’s a simple yet stylish way to prepare the summertime ocean harvest. I find a large pot and fill it with market-fresh seafood, add fresh vegetables and seasonings, then boil it. If I were cooking on the beach or at home, we would serve it in the traditional manner — the contents simply spread out on a newspaper in the middle of a table for all to share."

For Fleming’s Maine Lobster & Seafood Boil, Chef Skall also adds Manila clams, mussels and shrimp, along with fresh corn on the cob, new potatoes and andouille sausage, all cooked in a delicious stock. This dish is served in a bowl with freshly baked buttermilk drop biscuits and a coleslaw salad with fresh tomatoes and sliced mozzarella tossed with apple cider vinaigrette. The meal concludes with another summer favorite – a fruit cobbler of fresh peaches and dried cranberries for dessert.

Fleming’s Maine Lobster & Seafood Boil for Two is available for only $99* (not including tax and gratuity). It can also be ordered for one at $49.50. It is available at Fleming’s through August 15. This Memorable Meal is not on Fleming’s regular menu and available to Friends of Fleming’s who either make a reservation online or mention the "Memorable Meal" when making a reservation by phone.

*Does not include tax or gratuity. Memorable Meals are not on Fleming’s regular menu and are available through 8/15/10 at all Fleming’s Prime Steakhouse restaurants.
